Sockeye salmon: Our Sockeye Salmon is line caught, bled, and immediately iced for premium quality. It is caught in the Cook Inlet outside of Homer, AK, then processed (often within 8 hours) vacuum sealed, and flash frozen at 40+ degrees below zero. Our process guarantees the salmon is the best quality available, in fact it is "fresher than fresh" because of it. You will see and taste the difference immediately!
Coho salmon: Our Coho Salmon is line caught, bled, and immediately iced for premium quality. It is caught in the waters outside of Juneau, AK, then processed (often within 8 hours) vacuum sealed, and flash frozen at 40+ degrees below zero. Our process guarantees the salmon is the best quality available, in fact it is "fresher than fresh" because of it. You will see and taste the difference immediately!
Hot smoked salmon: Our Smoked Sockeye Salmon is the best smoked salmon we have ever tasted. We start with our own freshly caught Wild Alaskan salmon, brine it in our secret recipe, and smoke it for 24 hours in a hot smoker.  After it cools, it is vacuum sealed and flash frozen for premium quality.  You will think you are eating salmon that is fresh out of a fish camp smoker, and that's a GOOD thing!
Cold smoked lox: Our cold smoked salmon recipe and process was first created by Dr. Art Tilgner in Cordova, AK. Art learned of the European style of cold smoking and experimented with ingredients and smoking techniques, finally developing the product you have today. Now owned by Kenai-Red Fish Company, our smoking takes place in our small batch, family owned facility in Ninilchik, AK. Our process is done by hand with great care. It is created by an intensive process of adding unique flavors to premium wild caught Alaskan Sockeye salmon. We use the old world method of dry salt brining followed by the introduction of special flavors from virgin olive oils, natural sweeteners and infused spirits of the Caribbean. The fillets are then lightly cold smoked with Alaskan alder and allowed to age gradually under refrigeration. They are then flash frozen to guarantee freshness and quality.
