Coho Coho salmon (also known as silver salmon) has a mild, slightly sweet flavor with a delicate texture and firm, flaky flesh. Its mild flavor makes it a good gateway fish for salmon newbies or those who prefer a less bold profile. While not as brightly colored as sockeye, coho still has a vibrant orange hue to its flesh.
